Brother Bobby's Chicken Spaghetti
This recipe makes a large amount.
3 lbs. Chicken
16 oz. Spaghetti noodles
1 large onion
1 cup chopped celery
1 clove minced garlic
1 small jar diced pimentos
2 cans cream of chicken soup
1/2 lb. Velveeta cheese, diced
Boil and chop chicken, reserving broth. In three quart sauce pan simmer onion, celery, and garlic in 2 cups broth until tender. Do not drain. Add pimentos, soup , and Velveeta cheese. Stir and cook until cheese melts and soup is blended in. Add salt and pepper to taste. Cook noodles in remaining broth or water as desired, drain. Stir together sauce, chicken, and noodles. Place in large, greased casserole dish and bake at 375 degrees for 20 minutes. If desired top with grated cheddar and bake until melted.
Note: This recipe freezes well. Heat in 325 degree oven for about 2 hours or until hot.
