Tzimmes (Passover vegetables)

This recipe is enough to feed about 30 people so please adjust to your needs

  • 4 - 15oz. cans yams (drain liquid from 2)

  • 2 bags dried fruit i.e. prunes, apricots, apples, raisins

  • 4 -15oz. cans chunk pineapple

  • 2 cups orange juice

  • 1/2 cup honey

  • 1/2 tsp. cinnamon

Mix together in a large pan or crockpot. Make sure there is enough liquid so that it just covers everything. Cook over medium heat until it is just about to boil then turn down heat to very low just to keep warm. Do not over stir! You do not want to break up the vegetables.
