Sherrys Cabbage Casserole

1 Oblong casserole dish (or lasagna pan)
Ingredients for Casserole Base
2 pounds chopped green cabbage
1 large onion (sliced)
salt and black pepper
10.5 ounces canned cream of onion condensed soup
1 cup mayonnaise
2 teaspoons minced garlic
Ingredients for crunchy Topping
4 ounces shredded cheddar cheese
3 ounces Ritz cracker (crushed into crumbs; 2 short sleeves)
6 slices cooked bacon (crumbled)
1/2 cup melted butter
(I add crispy onions on the top or the crispy jalapenos)
Instructions:
Preheat oven to 350F. Toss together cabbage, onions, salt and black pepper and place in the bottom of a rectangular 9x13-inch casserole dish. Stir together the condensed soup and mayonnaise and spread over the cabbage as best as you can. Cover with foil and bake for 30 minutes.
In a small mixing bowl, toss together the cheese, cracker crumbs, bacon, and melted butter. Remove foil cover from casserole and sprinkle on the topping. (If using the crispy onions or jalapeños add to the top of this)
Bake for another 30-40 minutes or until topping is golden and cabbage is tender.
